Five Different Ways To Cook Chicken On Your Pellet Grill

Here are 5 ways to cook chicken on a wood pellet grill with links to recipes from Louisiana Grill.

Smoke a Whole Chicken

For those new to smoking meats low and slow, a whole chicken is an easy way to get your feet wet. Smoking is the method of cooking food under 250°F via indirect heat from a wood fuel. The resulting smoke flavours the meat over an extended period. Due to the extended cooking process (but not as lengthy as red meats) letting the chicken sit in a brine before your cook is recommended. This way, your chicken will retain as much moisture as possible and will result in a delicious, juicy and smoky bird.

Depending on the size of your chicken, your smoke should only take about 3 to 5 hours. After removing your bird from the grill, it is best to let it rest at room temperature for about 15 minutes before carving and serving it.

BBQ Chicken Wings

BBQing and smoking are terms that often get intertwined with each other and for good reason. Depending on where you are from the definition of barbecue can differ. For the purposes of this blog, we are referring to a hybrid style of cooking, in between smoking and roasting, or smoke-roasting. This cooking method is like smoking, but temperatures reach above 250°F and below the roasting or grilling temperature of 350°F.

Chicken wings were made popular by deep frying, but we prefer the healthier, BBQ version. When barbecuing chicken wings, it typically only takes about 40 minutes to cook them and you can still use Buffalo or your favourite sauce to spice them up. For additional crispiness, you can turn up the temperature, open the flame broiler plate and let them sear for about 2-3 minutes.

Bake Boneless Chicken Breasts

It is very easy to bake in a pellet grill and baking is a great way to cook boneless chicken breasts without drying them out. We do recommend using a brine once again since boneless, skinless chicken breasts have very little fat. In order for your pellet grill to truly bake, you’ll need to close your flame broiler plate and bake the chicken in a pan or baking dish. For chicken, we recommend setting your pellet grill temperature between 300°F and 375°F.

Fry Chicken Thighs

Frying involves submerging food in a hot oil to cook. It is best to fry food at a temperature between 350°F and 375°F. At any temperature lower than 350°F your food will be too greasy, any temperature higher than 375°F and it will burn.

Before chicken is fried, it is usually dipped in a batter or a dredge (think wet, dry or a combination of wet and dry elements). This gives the chicken a crispy and crunchy exterior while leaving the meat tender and moist.

Frying on a pellet grill is simple. Just heat up a cast iron skillet or pan with enough frying oil to submerge your chicken and you are all set. The best oils to use are canola, peanut, or coconut.

Grill Chicken Kabobs

If you’re in a pinch or just love the taste of a nicely charred piece of chicken, you can’t go wrong with grilling on your pellet grill. The real wood fired flavor adds savory elements to the char you get from grilling meats at high temperatures. Slicing a chicken breast up in cubes, sticking them onto a skewer and throwing it on the grill is also a relatively fast and convenient way to cook.
